Hunan is a province in Southern China, a region that has three traditional cooking-styles: Mountain, Lake, and Peasant. The food served at Brandy Ho's is "country style" Peasant cooking; simple, substantial and down-to-earth, prepared with fresh and healthy ingredients (never any MSG at Brandy Ho's) and a minimum of oil to ensure that the dishes are as healthy as they are delicious.

The "pepper" motif at Brandy Ho's signifies the heat of the food. Hence the food is hot and spicy. It also signifies the heat and humidity of the ancient Hunan region; where it is said that "when you eat pepper you sweat and cleanse yourself."
